Welsh Cookies
Ingredients- 2 cups flour
- 2 teaspoons baking powder
- pinch of salt
- 1/2 cup sugar
- 1/4 cup butter
- 1/4 cup shortening
- 1/2 cup currants (I use 1/4 cup mini chocolate chips and 1/4 cup dried cranberries)
- 1 egg
- 1/4 cup milk
- Mix flour, baking powder, salt and sugar in medium bowl until well blended.
- Cut in butter and shortening with a pastry blender until mixture is crumbly.
- Toss in currents.
- Beat egg and milk with a fork and add to flour mixture.
- Mix until blended.
- Dough should be consistency of pastry dough.
- Roll out dough to 1/4 inch thickness and cut with 3 inch cookie cutter.
- Heat greased griddle over moderate heat.
- Cook cookies 3 minutes or until golden brown. Turn and cook another 3 minutes.
- Remove and cool on wire rack. Let cool completely, then wrap in plastic wrap to store.
- Can also be frozen

ReplyDeleteWelsh cookies are cooked on a grill like pancakes so they don't come come hot out of the oven. : )
