Welsh Cookies

Welsh Cookies
Ingredients
  • 2 cups flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 1/2 cup sugar
  • 1/4 cup butter
  • 1/4 cup shortening
  • 1/2 cup currants (I use 1/4 cup mini chocolate chips and 1/4 cup dried cranberries)
  • 1 egg
  • 1/4 cup milk
Directions
  • Mix flour, baking powder, salt and sugar in medium bowl until well blended.
  • Cut in butter and shortening with a pastry blender until mixture is crumbly.
  • Toss in currents.
  • Beat egg and milk with a fork and add to flour mixture.
  • Mix until blended.
  • Dough should be consistency of pastry dough.
  • Roll out dough to 1/4 inch thickness and cut with 3 inch cookie cutter.

  • Heat greased griddle over moderate heat.
  • Cook cookies 3 minutes or until golden brown.  Turn and cook another 3 minutes.
  • Remove and cool on wire rack.  Let cool completely, then wrap in plastic wrap to store.
  • Can also be frozen
Not a real sweet cookie but very good.

    1. Welsh cookies are cooked on a grill like pancakes so they don't come come hot out of the oven. : )
