Rhubarb Dessert
Ingredients
- 4 cups cut-up rhubarb
- 2 beaten eggs
- 2 Tablespoons flour
- 1 1/2 cups sugar
- 6 Tablespoon butter
- 1/2 cup brown sugar
- 1 cup flour
- 1 pinch salt
- 1 Tablespoon baking powder
Place rhubarb in buttered 9 x 9 pan.
Combine eggs, flour and butter and pour over rhubarb.
For Topping
Combine butter, brown sugar, flour, salt and baking powder, using a pastry blender until consistence is that of course crumbs.
Sprinkle over rhubarb.
Bake at 350 degrees for 45 minutes.
Makes 9 servings
Quick and Easy and delicious. Tastes even better with a scoop of vanilla ice cream or whipped cream on top.

I am going to be giving this recipe a try...soon! We are getting peaches tomorrow so I'm guessing that the rhubarb will need to wait for a bit. :) Thank you so much for sharing the recipe.
