Blueberry Pan-Cake with Maple Frosting
Ingredients
  • 3 cups Bisquick
  • 1 3/4 cups milk (I used skim)
  • egg
  • 1 cup fresh blueberries
  • 2 teaspoons flour
Frosting
  • 2 cups confectioner's sugar
  • 1/3 cup maple syrup (I used lite)
  • 1/4 cup butter, softened
Directions
  1. Preheat oven to 350 degrees.  Stir Bisquick, milk, and egg until moistened.  In a bowl toss blueberries flour and fold into batter.
  2. Transfer to a greased 13 x 9 baking pan.  Bake until a toothpick inserted in center comes out clean, 15 -18 minutes. (20 minutes for me) Cool completely in pan on a wire rack.
  3. Beat frosting ingredients together until smooth; spread over cooled cake
I changed the ingredients around quite a bit.
Original recipe calls for Hungry Jack Complete Buttermilk Pancake and Waffle Mix.
I always use Bisquick for pancakes so used that.
Instead of the water it called for I used skim milk and since an egg is
used in the Bisquick pancakes added the egg too.

We both liked this a lot and I'll definitely make it again.  I'll probably just make half a recipe though cause it makes a lot.  Makes a nice change from regular pancakes.
