Chicken Enchiladas

Chicken Enchiladas
Ingredients
  • 2 cups chopped or shredded cooked chicken
  • 1 cup red bell pepper
  • 1 package cream cheese
  • 8 oz jar Salsa
  • 7 tortillas
  • cheddar cheese
Directions
  1. Stir chicken, pepper, cream cheese, and 1/2 cup of Salsa in pan on low until cream cheese is melted.
  2. Steam the tortillas and put about a 1/4 cup of the mixture down the center of each tortilla and roll up.
  3. Place seam side down in greased baking dish.
  4. Spread rest of Salsa on top and then the cheddar cheese.
  5. Cover with tin foil and bake for 15-20 minutes in a 350 degree oven.
Easy and quick

I make rice to go along with it.
