Chicken Enchiladas
Ingredients
- 2 cups chopped or shredded cooked chicken
- 1 cup red bell pepper
- 1 package cream cheese
- 8 oz jar Salsa
- 7 tortillas
- cheddar cheese
- Stir chicken, pepper, cream cheese, and 1/2 cup of Salsa in pan on low until cream cheese is melted.
- Steam the tortillas and put about a 1/4 cup of the mixture down the center of each tortilla and roll up.
- Place seam side down in greased baking dish.
- Spread rest of Salsa on top and then the cheddar cheese.
- Cover with tin foil and bake for 15-20 minutes in a 350 degree oven.
I make rice to go along with it.
