Chickpea Chocolate Chip Cookies
Gluten Free
Ingredients:
- 1 can chickpeas, rinsed and drained
- 1/2 cup peanut butter
- 1/2 cup honey
- 2 teaspoons vanilla
- 1/2 teaspoon baking soda
- Pinch salt
- 1/2 cup chocolate chips
- Mix all ingredients except for the chips together till smooth. Recipe calls for mixing in a food processor but I don't have one. So I mashed the chickpeas first with a fork and then used my mixer.
- Fold in chocolate chips (I used a cup)
- Bake on a greased cookie sheet for 20 minutes in a 350 degree oven.
- Cool on rack
A soft chewy cookie. 🍪

You should disguise the chickpeas. Maybe call them Secret Ingredient. 😊

ReplyDeleteThis is an interesting twist to the common chocochip cookie! And the recipe has only 4 steps! How easy! My friend makes some of the best choco chip cookies in the world! But hers is an elaborate recipe that calls for a lot of chocolate chunks instead of chocolate chips.
