Chickpea Chocolate Chip Cookies

These are surprisingly good!
Recipe from blogger friend Lisa's blog.

Chickpea Chocolate Chip Cookies
Gluten Free

Ingredients:
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking soda
  • Pinch salt
  • 1/2 cup chocolate chips
Directions:
  1. Mix all ingredients except for the chips together till smooth.  Recipe calls for mixing in a food processor but I don't have one.  So I mashed the chickpeas first with a fork and then used my mixer.
  2. Fold in chocolate chips (I used a cup)
  3. Bake on a greased cookie sheet for 20 minutes in a 350 degree oven.
  4. Cool on rack
Makes about 2 dozen
A soft chewy cookie.  🍪

  2. You should disguise the chickpeas. Maybe call them Secret Ingredient. 😊

  4. Thank you for sharing this delightful recipe dear Karen I am going to try this out today! It looks pretty easy with those simple ingredients and the huge bonus of being gluten free. Soft chewy one for a change, well that recipe is definitely a keeper! Do share such awesome recipes in your free time, I have seen some from your friend Lisa too. Regards!

  5. This is an interesting twist to the common chocochip cookie! And the recipe has only 4 steps! How easy! My friend makes some of the best choco chip cookies in the world! But hers is an elaborate recipe that calls for a lot of chocolate chunks instead of chocolate chips.
