Broccoli Rice Casserole

Broccoli Rice Casserole


Ingredients:
  • small onion
  • 1/2 cup celery
  • 1 pkg (10 oz) frozen chopped broccoli - thawed
  • 1 Tablespoon butter
  • 8 oz jar process cheese spread
  • 1 can cream of mushroom OR chicken soup
  • 5 oz can evaporated milk
  • 2 cups cooked rice
Directions:
  1. Melt butter in saucepan and over medium heat saute onion, celery and broccoli 3 to 5 minutes.
  2. Stir in cheese, soup and milk and blend well.
  3. Place rice in a 8 inch square baking dish.
  4. Pour cheese mixture over - DO NOT STIR.
  5. Baked uncovered in a 350 degree F. oven for 25 - 30 minutes or until hot and bubbly.
Easy and tastes good too.

  2. I used to make this all the time and my kids loved it. I served it as a side dish to fried chicken. The grandkids loved it, too. lol xo Diana

  3. I might try this soon but I'll substitute cauliflower for Broccoli because that's what I have in the fridge.
