Molasses Cookies
Ingredients:
- 1/2 cup sugar
- 1/2 cup brown sugar
- 3/4 cup shortening
- 1/4 cup molasses
- 1 egg
- 2 cups flour
- 2 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon cloves
- Preheat oven to 350 degrees. Mix sugars, shortening,, molasses, egg, and ginger together until well combined.
- Add rest of ingredients and mix till combined.
- With hands make walnut size balls, roll in sugar and bake 9 - 11 minutes. I used the medium size Pampered Chef scoop and baked them for 9 minutes and they came out perfect. Nice big size and chewy.
- Allow to cool on baking sheet for a minute, then transfer to cooling rack to cool completely.

I used this same recipe to bake molasses cookies for my mother at Christmas. I cooked some of them to long so she dunked them in her tea! She loved them so the recipe is a keeper.π
