Oatmeal Muffins

 Oatmeal Muffins

  • 1 cup quick cooking oats
  • 1 cup milk
  • 1 cup flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 well beaten egg
  • 1/4 cup vegetable oil
  1. Preheat oven to 425 degrees
  2. Combine the oats with milk and let stand for 15 minutes.
  3. Sift together flour, baking powder and salt, set aside.
  4. Combine beaten egg, oil, sugar and oatmeal mixture
  5. Add all at once to the sifted dry ingredients stirring just to moisten.
  6. Fill greased muffin pans 2/3 full - I used muffin cup liners.
  7. Bake at 425 for 15-20 minutes
Yields 12 muffins

A light and not overly sweet muffin but sure good.
Great for breakfast or anytime.
I like mine with a little butter on it.
