Lemon Fudge

Lemon Fudge

  • 1/2 cup REAL butter
  • One 4.5 oz cook and serve lemon pudding (NOT INSTANT)
  • 1/2 cup milk
  • 3 3/4 cups icing sugar
  • 1 teaspoon lemon extract
  1. Line a 9" square pan with foil, bring it up the sides.
  2. Use butter and heavily butter the foil.
  3. In large saucepan combine, pudding mix, milk, and butter.
  4. Cook and stir over medium heat until mixture has thickened.
  5. Remove from heat.
  6. Beat in icing sugar and lemon extract.
  7. Pour into butter pan and refrigerate.
  8. Use tinfoil to lift fudge out of pan and cut into square.
  9. Store in refrigerator.
