Mini Parmesan Herb Loaf
Ingredients
- 1 1/4 cups flour
- 3 Tablespoons plus 1 teaspoon grated Parmesan cheese, divided
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons dried minced onion
- 1 1/4 teaspoon Italian Seasoning (I just used basil), divided
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 2 Tablespoons plus 2 teaspoon 2% milk.
- 4 1/2 teaspoon butter, melted
- 1 egg white, beaten
Directions
- Combine flour, 3 tablespoons Parmesan cheese, sugar, onion, 1 Tablespoon Italian Seasoning, baking soda, and salt.
- In another bowl combine sour cream, milk, and butter.
- Stir into dry ingredients until just moistened.
- Turn onto a floured surface and knead for 1 minute.
- Shape into a round loaf, place on a baking sheet coated with non stick cooking spray.
- With scissors, cut a 1/4 inch deep cross in the top of the loaf.
- Brush with egg white. Sprinkle remaining Parmesan and Italian seasoning.
- Bake at 350 degrees for 35 minutes.
It measures 6 inches across top and the circumference of the loaf is 18".
Great to dip bread in olive oil and herbs.

ReplyDeleteI am going to make this loaf! It doesn't involve a lot of kneading, or waiting for it to rise. We'll have it for breakfast one morning!
