Mexican Beef Skillet
Ingredients:
- 1 Tablespoon olive oil
- 1 Tablespoon minced garlic
- 1/2 medium onion, minced
- Red bell pepper, diced
- 1 lb ground beef
- 3 Tablespoons taco seasoning (home made taco seasoning recipe HERE)
- 1/2 cup salsa
- 15 oz can black beans
- 15 oz can kernel corn
- Shredded cheddar cheese
Directions:
- Heat olive oil over med/high heat in large skillet.
- Add garlic, onion, and bell pepper. Saute for 3 - 5 minutes.
- Then move veggies to the side and add ground beef. Saute beef until fully cooked. Mix everything together in pan.
- Once beef is fully cooked add taco seasoning, salsa, and black beans and cook for a few minutes. Brink to a boil over med/high heat.
- Once boiling lower heat and simmer for 20 minutes.
- Sprinkle cheese on top.
